Okra Fresh

Fresh okra (bhindi or ladies finger). Wash and dry it completely before cutting to avoid sliminess, then cook it in bhindi masala, bhindi do pyaza, stuffed bhindi, kurkuri bhindi, sambar and vendakkai fry. Choose tender pods that snap easily. Store in the fridge in a paper bag and use within a few days.
