Green Zucchini Fresh

Fresh green zucchini (courgette), tender and mild. Slice or dice it for stir-fries, curries, dals, sabzi, soups, pasta and grilled vegetables, or grate it into parathas and muffins. It cooks quickly, so add it near the end. Store in the fridge in the vegetable drawer and use within a few days.
