Fresh shallots (small onions or sambar onions), sold in a bag of about 500g. They have a sweeter, milder taste than regular onions and are essential in South Indian sambar, vathal kuzhambu, theeyal and chutneys, as well as pickles and curries. Soak in warm water for a few minutes to make peeling easier. Store in a cool, dry, airy place.
