Eggplant Fresh

Fresh eggplant (brinjal or baingan) with glossy purple skin. Roast it over a flame for baingan bharta, or use it in baingan masala, bagara baingan, brinjal curry, sambar, pakoras and moussaka. Choose firm, heavy eggplants. Store in a cool place or the vegetable drawer of the fridge and use within a few days.
